Domaine Servin should be on every Chablis-lover’s radar screen. It’s one of the oldest wineries in in the region, it has one of the largest vineyard holdings, and it makes damn fine wines.

The Servin family has roots in Chablis going back to the 1600s. Over the decades the family and its various members have been involved in winemaking, vineyard work, and even barrel cooperage. Today the Domaine is in the hands of François Servin, a direct descendant of those original pioneers of viticulture in this area. François is capably assisted by Marc Cameron, the Domaine’s export manager. Marc moved to Chablis from his native Australia, to work with Servin almost 27 years ago. Marc was our host for the afternoon we spent at Servin, tasing and learning more about the winery’s history.

Beneath its surface lie remarkable medieval cellars that sprawl across 3.5 hectares, reaching a depth of 60 meters underground—truly exceptional examples within the region of Burgundy.

We were lucky enough to visit Domaine Bersan, where the family has been making wine there since the mid fifteenth century, and they have the cellar to prove it.

Whenever we visit a wine region for the first time, our plans always include time for places recommended by locals or wine friends with similar palates. As we prepared for our first visit to Chablis, a very trusted source recommended Domaine Famille Savary. Having never tasted their wines and knowing very little about them, we were both curious and hopeful for a new discovery that we could enthusiastically endorse. Meeting and tasting with Olivier Savary was an experience that definitely met our high expectations thanks to high-quality wines at remarkably fair prices.
