“Our restaurant is a classic North American steakhouse by nature,” he explains, “but also with the influence of the sushi menu, it creates a unique experience for the guests. With the steakhouse aspect being the forefront, you really lean into that style of cuisine — and then, with the great diversity Vancouver has, the element of the sushi menu really helps tie in the multiculturalism.”
The result is a menu that feels deeply rooted in its place, while also pulling inspiration from global sources. “The Victor’s menu can take pieces from all sorts of inspiration both locally and globally and apply it to the menu and have it all tie in cohesively,” says Blundell — and it shows in every course.

Speaking of wine: the cellar here is no afterthought. The Victor offers a seriously impressive list, with an emphasis on BC, California, and France. Their wine-by-the-glass program, powered by an Enomatic system, lets you try pours that would usually be reserved for full bottles only — a nice touch for those who like to explore.
