On March 3rd, an exclusive tasting at the Vancouver Club provided a rare opportunity to explore the hidden gems of Bourgogne, a region steeped in tradition yet constantly evolving.
Hosted by the Bourgogne Wine Board, “Bourgogne Wines – Take a Closer Look” invited wine lovers and industry professionals to step beyond the celebrated Grand Crus and dive into the lesser-known village appellations that form the backbone of this historic wine region.
In the picturesque Auxerre region of Burgundy lies a hidden marvel that beckons wine enthusiasts seeking a truly fascinating experience. Les Caves Bailly Lapierre, situated above the charming town of St-Bris-le-Vineux, crafts its exceptional sparkling wines in an extraordinary subterranean setting—an ancient quarry that imparts unique natural conditions to the winemaking process.
Established in 1972, Les Caves Bailly Lapierre is a collaborative effort of 71 dedicated winegrowers who proudly showcase their specialty, Crémant de Bourgogne, along with a selection of other wines. The heart of this winemaking haven lies deep within the stone, where the historic wine caves cradle the creation of their renown crémants.
Whenever we visit a wine region for the first time, our plans always include time for places recommended by locals or wine friends with similar palates. As we prepared for our first visit to Chablis, a very trusted source recommended Domaine Famille Savary. Having never tasted their wines and knowing very little about them, we were both curious and hopeful for a new discovery that we could enthusiastically endorse. Meeting and tasting with Olivier Savary was an experience that definitely met our high expectations thanks to high-quality wines at remarkably fair prices.

Chablis is the northern most wine growing region in the appellation of Burgundy. The name has become synonymous with great white wine. Our recent visit to the region taught us a great deal more about the area, reaffirmed our love for its wines, and showed us what a truly beautiful place it is to visit.
Our first trip to Burgundy definitely didn’t disappoint. We visited larger well known wineries (Domaine Louis Jadot, Maison Joseph Drouhin) and discovered some wonderful new gems (Domaine Truchetet, Domaine David Moreau, Domaine Philippe et Arnaud Dubreuil). We ate fantastic farm-to-table fare at terrific local restaurants and sipped sensational wines at some quintessentially Burgundian wine bars. We hiked through some of the most renown Grand Cru and Premier vineyards in the world and delved deep into historic cellars beneath Beaune.
